For the 2017 vintage of Tsundere we’ve opted to incorporate a bit of Petit Verdot. With its fantastic density and unmistakable floral violet undertones, this is sure to become a key component of the blend as we look to future vintages. At the core of the wine, Cabernet Sauvignon and Tannat contribute notes of Cassis, black cherry, with complexing herbal undertones. Syrah rounds out the palate with its signature richness and chalkier tannin profile while adding depth with notes of blueberry, licorice, and savory layers. Each varietal is fermented separately in small open tops using only native yeast. After nearly 5 weeks on skins the grapes are gently basket pressed. The wine is then aged in 300L French Oak Barrels of which 70% are new, for 22 months prior to bottling unfined and unfiltered. The 2017 is beautiful today, but will certainly reward those with the ability to cellar the wine for an additional couple years. Drink with confidence over the next 10+ years.
